My family’s been working with gluten intolerances since I was fresh out of the womb, and Pamela’s Pancake Mix has been our favorite ever since I can remember. They’re perfectly sweet, fluffy, and the mix is versatile, so if you’re in the mood for crepes, oui oui go right ahead boo boo.

Pamela’s Gluten-Free Waffle/Pancake Mix
Maple syrup (the real kind, don’t you dare pull out that Aunt Jemima)
1. Make pancake batter per Pamela’s instructions – add less water than instructed for a fluffier pancake!
2. Pour the batter in the pan, and add bananas on top. When you flip them over, the bananas will start to caramelize nicely on the bottom, giving it a sweet roasted flavor
3. Slice your strawberries, stack them up, and drizzle/top with the sweet stuff!
