Description

This Spicy Shakshuka with Feta is a deliciously healthy breakfast dish, traditionally made with some added spice! Vegetarian and gluten-free, too!

Ingredients

  • 1 28oz can fire-roasted tomatoes
  • 2 Tbsp olive oil
  • 1 red onion, diced
  • 4 garlic cloves, minced
  • 1 tsp cumin
  • 1/2 Tbsp smoked paprika
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt
  • 4 eggs
  • Fresh feta cheese crumbles
  • Fresh parsley

Instructions

  1. Heat olive oil in a pan or dutch oven
  2. Add garlic and red onion, and sauté until soft
  3. Add spices, and mix thoroughly
  4. Add fire-roasted tomatoes in, and simmer for 15 minutes
  5. While this is cooking, poach eggs in a separate pot of water
  6. To serve, top tomatoes with feta, poached eggs, and fresh parsley
  7. Serve hot and enjoy!
