This Parmesan Baked Cod with Garlic and Lemon is a healthy, protein-packed meal that’s absolutely loaded with flavor! It’s covered with garlic, paprika, and parmesan cheese and baked to flaky perfection, perfect for your next dinner.
How to bake cod
You’ll find that a lot of cod recipes are either baked or fried. Though fried fish is absolutely delicious, I really hate the cleanup process of frying things in my kitchen. Baked cod recipes are lighter, easier to make, and the cod itself always turns out flaky and easy to eat.
For this Parmesan Baked Cod with Garlic and Lemon, I chose to use frozen cod fillets from Blue Circle Foods. This blog post isn’t sponsored, though the cod fillets were sent to me by the company! My favorite cod recipes are those that are light and fluffy. The best cod recipes always include lemon, like this Healthy Baked Lemon Garlic Cod from The Spruce Eats, and this Greek-Style Baked Cod from the Mediterranean Dish. I wanted to make a baked cod with a nice crust, but still light enough to be diet-compliant. I also just generally love parmesan cheese, so that happened.
To make this Parmesan Baked Cod with Garlic and Lemon
- Fresh or frozen cod fillets
- Grated or shredded parmesan cheese
- Garlic powder
- Italian seasoning
- Olive oil
- Lemon juice
Since cod is a lighter fish, it doesn’t have a lot of natural oils to help the coating stick to it. Especially when you’re making a baked fish, you don’t want the toppings to fall off. To prepare, dip or brush the cod with extra virgin olive oil, and let it soak into the cod while you prepare the crust.
For the crust, simply add all of the spices and parmesan cheese into a bowl. Then, pat the cod fillets into the mixture on all sides, and place onto a baking sheet lined with parchment paper or a silicone mat.
Finishing this Parmesan Baked Cod
To bake the cod, simply pop the baking sheet in the oven at 400˚F, and let bake for 12-15 minutes. Top with fresh squeezed lemon juice, plate, and serve!

This Parmesan Baked Cod with Garlic and Lemon is a healthy main dish that’s packed with protein, delicious flavors, and baked to flaky perfection!
- 4 cod fillets, thawed out
- 1 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp Italian seasoning
- 1/2 tsp salt
- 2 Tbsp olive oil
- 2 tsp paprika
- 1 lemon, sliced into wedges
- Preheat oven to 400˚F
- Coat cod fillets in olive oil on all sides
- In a large bowl, add Parmesan cheese, garlic powder, salt, Italian seasoning, and paprika and mix thoroughly
- One by one, place each cod fillet into the spice mixture and press to coat
- Line up cod on parchment paper on a baking sheet
- Bake at 400˚F for 12-15 minutes
- Top with fresh squeezed lemon juice, and enjoy!
