Fluffy Paleo Blueberry Muffins

Description

The fluffiest blueberry muffins your oven will ever have the pleasure of baking. Sweet, light, and with clean ingredients!

Ingredients

  • 2 1/2 cups almond flour
  • 1 1/2 tsp coconut flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup coconut sugar
  • 3 eggs
  • 1/4 cup coconut milk
  • 1/4 cup avocado oil
  • 1 tsp vanilla extract
  • 1 pint (~2 cups) fresh blueberries
  • Zest of 1 large lemon

Instructions

  1. Preheat oven to 350˚F
  2. Line a muffin pan with muffin liners
  3. Using a stand mixer or hand beater, whip together eggs and coconut sugar until smooth and fluffy
  4. Add in coconut milk, avocado oil, vanilla extract, and lemon zest and mix thoroughly
  5. Half a cup at a time, add in your dry ingredients until all are mixed
  6. Using a spatula, gently fold in the blueberries
  7. Fill the muffin tins with batter, about 75%, as they will rise
  8. Top muffins with a few blueberries
  9. Bake at 350˚F for 22-24 minutes
  10. Remove from muffin tin, and let cool before serving. Enjoy!
