OH MAN OH MAN THIS BROWNIE RECIPE IS PERFECT IF I MAY SAY SO MYSELF! I’ve been trying to perfect my brownie recipe for MONTHS, and this is the first one that’s perfectly chocolatey, the perfect texture, cake as heck, and the perfect amount of sweetness.
PS: The brownies themselves are paleo, but the vanilla ice cream from Slim Twin is not! This is a #sponsored post in collaboration with Slim Twin, but the ice cream is easily substitute-able with coconut/almond milk ice cream 🙂
1/2 cup coconut milk
1/4 cup coconut oil, melted
1/2 tsp vanilla
1/2 tsp salt
1 tsp baking soda
1/2 cup cocoa powder
1/2 cup Bob’s Red Mill 1:1 GF Baking Flour
2 scoops collagen
1/2 cup coconut sugar
1. Preheat oven to 350˚
2. Mix all of the dry ingredients together in a bowl
3. Add wet ingredients and whisk thoroughly
4. Cover an 8×8 pan with parchment paper, or oil down so brownies don’t stick
5. Bake at 350 for 25 minutes, let cool before cutting, and enjoy!
*For the ice cream sandwiches, I baked them in two separate layers for 20 minutes each – cooking time may vary depending on the pan/whether or not you’re using a convection oven!
