Being gluten/dairy free, I don’t miss many foods, because I can usually create/find an alternative that tastes just as good, if not better. But I miss brownies, and I STILL haven’t perfected my paleo protein brownie yet (working on it), so for now, here’s my go-to!
Dairy free chocolate chips (my favorite are from Enjoy Life)
1/2 cup coconut sugar
1. Add Pamela’s brownie mix, eggs, and water per packaging instructions
2. To me, Pamela’s just aren’t sweet enough, so I had 1/2 cup coconut sugar, which has the lowest glycemic index for sugars, to sweeten it up a bit!
3. I will always add chocolate chips into brownies. Always. I used about 1/2 a cup of them here, but add to your heart’s desire!
4. Bake, and enjoy!
