I, personally, am not a rabbit. Therefore, I, personally, prefer not to eat like one. A vegan take on chicken salad, this mix is packed with proteins + healthy fats, and is super quick and simple to prep!
1 can chickpeas, rinsed
Juice of 1 lemon
Salt + pep
1. Rinse + drain chickpeas – the drier they are, the more they soak up the avo!
2. Mash chickpeas + avocado together in a bowl (I used a potato masher)
3. Add lemon juice + spices, and load that baby up!
