Caramel Apple Cookies [Gluten-Free]

With a fluffy snickerdoodle texture and soft salted caramel center, these gluten-free caramel apple cookies are the perfect fall cookies!



  • 2 eggs
  • 1/2 cup apple cider
  • 1/2 cup butter, room-temperature
  • 1 tsp vanilla extract
  • 2 cups gluten-free flour mixture
  • 1/4 cup coconut sugar
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1 bag soft chewy caramels


  1. Using a stand mixer or hand beaters, add eggs to a large bowl and beat on high speed for 30 seconds
  2. Add coconut sugar, and beat until fluffy
  3. Add room-temperature butter, and beat until smooth
  4. Add vanilla extract, apple cider, and rest of dry ingredients to the bowl. Mix on medium speed until doughy
  5. Scrape down all the sides of your bowl, and chill dough for 2 hours
  6. Line a baking sheet with parchment paper, and preheat oven to 350˚F
  7. With an ice cream scoop, scoop out a ball of dough and press thumb in the middle
  8. Place a caramel in the center, and re-roll into a ball. Place on parchment paper
  9. Repeat until out of dough, and spread out the dough balls – the cookies do expand
  10. Bake cookies at 350˚F for 10 minutes
  11. Let cool before serving, and enjoy!


  • If you bought large caramels, you may want to cut them in half!
